This February, during Canberra Whisky Week, we welcome Robbie Gilligan to the nation's capital to share with us some of his spectacular whisky!
After both working in the Tasmanian distilling industry distilling, creating, selling and managing at Lark, Overeem, Redlands Distillery and Old Kempton Distillery, Robbie - A Glaswegian - and his wife Emma - a homegrown Tasmanian - decided to branch out and explore making their own style of distilling whisky.
After spending many years searching for a suitable site, as luck would have it, shortly after the birth of their son on a Sunday drive they stumbled across the perfect place. It was then that they finally began their dream of building the Derwent Distillery - on the banks of the Derwent River (timtumili minanya) in Dromedary Tasmania.
Robbie is bringing a bundle of joy (otherwise known as whiskies) with him for us to sample as he goes through the history and the making of both the distillery, and the whiskies in question. We'll start with some of his new make spirit before we delve into some single malts that have been in botrytis, tawny, and French oak casks - as well as a special treat for all who attend; a sneak peak straight from the cask of the 2025 release of Derwent's Winter Release Cailleach!
